Today I bring you a recipe that is nothing but the vegan version of delicious meatballs, the star ingredient with which we replace red meat will be the quinoa that offers us a large percentage of animal protein, as well as great contributions in vitamins and minerals essential for the proper functioning of the body. We will accompany them with some delicious wholemeal spaghetti and a basic tomato room so this recipe is suitable for all kinds of people. Come with me to prepare this succulent recipe.
Vegan quinoa meatballs

♡ 150g quinoa
♡ 100g cooked lentils
♡ 1 onion
♡ 2 tablespoons whole wheat flour
♡ 1 teaspoon parsley
♡ 1 teaspoon garlic powder
♡ Salt and pepper
♡ Extra virgin olive oil
Ingredients for the tomato sauce
♡ 4 tomatoes
♡ 1 onion
♡ 1 pinch of salt
♡ 1 pinch of sweetener (optional)
PREPARATION

Total: 80min
The first step is to wash the quinoa very well to remove any foreign element, then grab the best pot wave we have and place the quinoa with approximately 350ml of water, add a pinch of salt and let it cook, we will realize that the quinoa is ready when all the water has evaporated. Then we reserve.
In another wave pot, we will put to cook the lentils that should be ready in a time almost the same as the quinoa, notice in the packaging the mode of preparation and follow the instructions of the amount of time in cooking can sometimes vary. after the lentils are ready we will drain the excess water with a strainer and let it cool to room temperature.
The next step will be to chop our onion in squares, we choose a good frying pan where we will throw a jet of oil we will take it to high fire, when this very hot the oil we will throw the onion and we put to slow fire, we will only sauté until it begins to crystallize.
Once the onion is almost ready, grind the lentils with the help of a fork, it is not necessary to be careful that there is a perfect lentil purity we only need to make the consistency of the grain disappear. After this ready the pure we will throw it in the frying pan with the onions and we will stir well, we extinguish the fire and we pass it to the pot where the quinoa is ready, at this moment we will throw the garlic and the parsley and the 2 spoonfuls of flour.
The next step will be to knead with the help of our hands previously washed, knead the mixture of quinoa, pure lentils, and other ingredients, the idea is to get a manageable mass but a little sticky this is normal, finally, take to the refrigerator so that the mixture compacts a little.
Now we can devote ourselves to the preparation of the tomato sauce, the time we take to make the room will be just enough time to keep the dough of quinoa meatballs in the fridge.
The preparation of the sauce is very simple we only have to chop the ingredients in very small squares, and we take it to a frying pan with a jet of oil we add a pinch of salt and some sugar, this we can do for about 20 minutes, enough time for the mixture to thicken revealing the sauce.
We can take the dough of the quinoa meatballs out of the fridge, and as simple as making one by one the balls that are characteristic of the meatballs, after we have them ready we will take them to a tray with baking paper and having preheated the oven to 19 degrees Celsius we will leave them until they brown in about 20 minutes.
Last but not least of all the steps we will prepare the integral spaghetti, it depends on the brand that you use you can guide you in the times of cooking.
