Today I bring you a classic recipe for Arab food, which is vegan in nature, although we are not confused by the fact that Arab countries are large consumers of vegetables and dry grains does not mean that they are vegan, on the contrary, have many meals with meat, although the fact that they eat many vegetables, as well as products of animal origin, makes their diet is balanced. For the moment we will concentrate on this delicious Falafel recipe. Come with me to prepare this oriental delicacy.
Delicious Falafel
My secrets INGREDIENTS
♡ 400gr of chickpeas
♡ 1 onion
♡ 4 tablespoons chickpea flour, alternatively you can use wheat
♡ 1/2 sachet of baking powder
♡ Garlic powder
♡ Parsley
♡ Cilantro
♡ Cumin
♡ Curcuma
♡ Pepper
♡ Curry
♡ Breadcrumbs
PREPARATION
Cooking time: 45min
Total: 65min
You can use many spices to give more flavor to the recipe.
The first and most rigorous step will be to wash the onion very well to remove any trace of soil or toxin and reserve.
Then we will have to cook the chickpeas, we choose a pressure cooker to cook the chickpeas quickly and efficiently, I recommend you leave soaking the day before for faster cooking. This should last 45 minutes depending on the brand of chickpeas. Then leave at room temperature, then drain very well to remove any excess water, if you want you can save the aquafaba to make any other preparation.
Once we have drained the chickpeas well drained the colocates in a bowl and grind with the help of a fork, then we will chop very finely, I recommend you do it with a blender then add to the chickpeas and mix very well, to get the desired texture we must go adding chickpea flour or wheat, and start kneading until you get a dough that does not stick from the hands, and after this step begin to add the spices to give its characteristic flavor.
I have not placed the amounts of spices to use, I leave it to your choice in what proportions you want to take the flavors and enhance the texture of this delicious falafel, you can use more garlic to provide a rich aroma and flavor. As a last step add the yeast mix very well and let stand for a lapse of 45 minutes.
Once the time has elapsed we will begin to prepare the falafel with its characteristic form, we will make a few balls of the same size and then flatten with our hands. You can use breadcrumbs to breadcrumbs and achieve a more golden look when we are frying.
In a frying pan place a generous jet of oil and fry each piece until it browns side by side.
Now ready to eat. If you get to be dough you can keep it in the refrigerator without any problem to eat the next day, or better you can keep in the refrigerator to keep longer.
I let you try this recipe and tell me what you think! ;)
Benefits of chickpea
The chickpea is one of the most important grains in the diet of any vegan, is an excellent helper to maintain a digestive system thanks to its soluble fiber content, is considered a superfood for its high vegetable protein content, so it is indispensable in the vegan diet, in addition to cooking you can get aquafaba which is one of the most recurrent egg substitutes in vegan pastries. It contains Polyphenols, Beta-carotene, Phytonutrients, and Vitamins (A, B complex, C, D, E, and K) which makes it an excellent fighter against chronic diseases as well as heart and cancer.
