Vegan Apricot Plum Crostata

Bake Time: 35-40 minutes
Makes - 1 crostata
Ingredients:
1 cup all-purpose flour
5 tbsp vegan butter
Pinch of salt
6 tbsp cold water
1.5 plums, sliced
1 slice of orange
1/2 tsp sugar
4-5 tbsp apricot jam
Directions:
Preheat oven to 350-degrees. Begin by making the dough. Mix flour and salt in a bowl and with a fork or pastry cutter, cut the butter into the flour until chunky. Gradually, add one tablespoon of water at a time and mix until dough forms. You may need to use your hands.
Place the dough in the fridge as you work on the filling.
Slice the plums and mix the sugar and orange juice with the plums in a bowl. Next, take the dough and roll it out into a rectangular (or circular) shape with a rolling pin on top of a floured surface. Once complete, spread the apricot jam on the dough, leaving about 1-1.5 inches of space around the edges. You'll be folding the dough.
Place the sliced plums on top of the jam. Next, grab a piece of the dough's crust, lift, pinch and press it onto the jam's edge. Complete the same process until all edges are turned in. Brush the crust with melted butter.
Bake at 350-degrees for 35-40 minutes.
