Last weekend I was visiting homehome in the countryside, where my mom baked me one of my favourite savoury treats, vesrinkilöitä, I don't know how I would translate that to English, a water doughnut? bagel?, I don't know. I was supposed to take a bag full them to take back to the city, but with a hassle of going sledding and packing in a hurry, I completely forgot and I was absolutely gutted by it!

I asked my mom for the recipe so I could make them myself. It's a pretty simple thing to make, but requires starting the baking on the previous evening. I felt like being in a baking mood today so I started my dough yesterday and got to baking this morning 8am sharp.

Here is the recipe in case anyone is interested:

  • 5dl water (+a few litres for boiling)
  • 10g fresh yeast
  • 1tsp salt (+a shit ton for the water you boil the things in)
  • 1kg flours

Mix the water, yeast, salt and 250g of flour together on the previous evening and let sit overnight on room temperature. The next morning, add the rest of the flour. Remember that flour measurements are never exact and you have to see how much you actually need. I ended up putting quite a lot less than the original recipe required, I always opt for lighter dough, rather than a really dry and heavy.

Knead the dough really well, I use the Kitchen Aid and had the dough rolling around for 20 minutes, and almost overheated my mixer.

Let the dough rise.

Divide the dough into semi-equal little balls and make into bagel shapes.

Let rise again, and prepare a salt water bath for them and heat the oven to 250°C.

The water needs to be at a boil, and salty like no other. No pasta water salty, more like Dead Sea salty, no joke. Put more than you think you need, it is crucial for the taste. Pop the bagel thingies to the water for approximately half a minute, scoop up to a baking tin and put it the oven immediately.

Bake until slightly golden.

Enjoy your savoury treats alone or with a cup of tea, friends and sharing optional. They are delicious and I am gonna eat 20 of them today, no joke. By the way, they freeze really well and after you let then thaw a little, pop to a toaster and they are almost like freshly baked.


Ps. I reported to mom about the baking, and she send a picture back that she is making another patch too, to be send to me with my sister who is coming over today. So I'll be getting some extra to be put on the freezer for a rainy day. Carbs make me happy.

Well, at least you know, if your Steemian career turns ugly you can always make a baking shop! I wonder if you got a sealing package if you couldn't open an online "water doughnut" shop...

Well I used to be a chef and did a few baking shifts every once in a while too, but I do hope I don't have to go back and can keep baking just in my own time.

I know those as Montreal Style bagels.

But I'm surprised there isn't a little sugar to feed the yeast. It must be getting it's meal from the flour.

Interesting, I had to google those, looks like they also have egg and honey in them. Oh I forgot to mention the sugar, I do throw in a tiny bit for the yeast, but it is not necessary, my mom doesn't use that trick and her's are always just as good or better than mine.

Wow, these look awesome. I think I will attempt them. Are they bagels then? I did always wonder how to make a bagel!

If I am not completely mistaken, this is a similar process to making bagels, it's the boiling on salt water before baking in the oven that gives the nice chewy texture to the bagels :)
