Tteokbokki is typical fare at Korean street food carts and is also found on the menu at most Korean food restaurants. It is made of finger-shaped rice cakes called garae tteok and gochujang, a type of chili pepper paste. Along with its principle ingredients, this sweet and spicy dish is commonly made with vegetables, egg and strips of pressed fish cake called odeng. However, the list of ingredients does not stop there. Variations on the dish are limitless, and creative cooks will love how easily tteokbokki can be customized to suit almost any palate or craving.This simple tteokbokki recipe serves two people. It uses basic ingredients and requires very little prep time.

Tteokbokki Ingredients

  • 20 sticks garae tteok
  • 1 cup sliced odeng
  • 2 scallions, chopped
  • 3 tbsp. gochujang
  • 2 tbsp. sugar
  • 1 tbsp. soy sauce
  • 2 cups water

How to Make Tteokbokki

  1. Pour the water into a pot and heat on high until boiling. Turn the heat down to medium.
  2. Add the soy sauce, gochujang and sugar. Stir until the sugar is completely dissolved.
  3. Add the garae tteok, odeng and scallions into the broth.
  4. Cook until the rice cakes are tender and remove the pot from the burner.

Tteokbokki Using Ramen Noodles and Hot Dog

One common variation of tteokbokki uses ramen noodles instead of garae tteok to create an equally delicious dish known as rabokki. This simple recipe combines ramen noodles and rice cakes to achieve the best of both worlds. It makes two hearty servings.

Tteok-rabokki Ingredients

  • 2 cups garae tteok
  • 1/2 package ramen noodles
  • 1 cup sliced odeng
  • 2 scallions, chopped
  • 3 tbsp. gochujang
  • 2 tbsp. sugar
  • 1 tbsp. soy sauce
  • 3 cups water

To make tteok-rabokki, use the updated ingredients and follow the basic tteokbokki recipe described above. Once the rice cakes are tender, add the ramen noodles. Stir frequently to break apart the noodles and to thoroughly mix together the ingredients. If necessary, extra water may be added during this step. When the ramen is fully cooked, remove the pot from the burner.

Tips

  • Tteokbokki is typically brought to the table in a large, communal dish so that diners can choose the parts they want to eat.
  • Garnish the dish with a sprinkling of sesame seeds and a hardboiled egg, sliced or whole.
  • To make a meatier dish, replace the odeng with thinly sliced hot dogs or chopped pork.
  • The recipes make a definitely sweet, moderately spicy broth. Adjust the amounts of sugar and gochujang to achieve the desired flavor, or try using honey instead of sugar.
