Challenge. How make Italian Carbonara pasta
INGREDIENTS for about 2 portion :
pasta 300 g
guanciale or pancetta 150 g
eggs yolk medium size 6
Pecorino romano or Parmesan cheese 50 g
salt 1 pinch for the eggs and 2 fist for the water
black pepper 2 pinch
To prepare the Carbonara , start by putting a pot with salt water on the fire and bring to boil to cook the pasta.
Cut in little slices the Pancetta (that is not bacon) and pour it into a non-stick pan. Saute' for about 15 minutes over medium heat, be careful not to burn it otherwise it will give off a too strong aroma.
Dip the spaghetti or any pasta that you may prefer in boiling water and cook for the time indicated on the package.
Meanwhile, pour the egg yolks in a bowl ,
add the majority of the pecorino cheese , salt, pepper and some spring onion if you like and beat the eggs very hard.
Meanwhile, the bacon is ready , turn off the heat and keep it aside .
Drain the pasta al dente directly into the pan with the bacon
and sauté briefly to flavor it.
Remove from heat and pour the mixture of eggs and pecorino into the pan
Stir fry to mix
put the pasta in the plates and garnish with the leftover of pecorino cheese.

It is advisable to immediately consume the carbonara pasta .
