Chickpea cream (Hummus)
The cream of chickpea (hummus) is a perfect recipe if you do not have much time or if you have a dinner with friends and pretend to be very good, it will serve as a good snack, also to accompany a meat dish or salad. This typical Middle Eastern dish is very nutritious and healthy.

Chickpea cream (Hummus):
Ingredients (6 people)
- 1 cup of chickpea or a can of chickpeas, rinsed and drained
- 1 chopped onion
- 2 crushed garlic cloves or 1/4 teaspoon garlic powder
- 1 teaspoonful of salt · 1 tablespoon of sesame seed paste (tahini paste)
- 2 Tbsp. of lemon juice 1/2 cup olive oil
Preparation:
Soak the chickpeas in water from the previous night. Cook in boiling water for about an hour. Drain. Add a little olive oil, onion, minced garlic, salt and cumin. Cook everything a few minutes. Blend the cooked preparation with more olive oil, the tahini paste and the lemon juice until a homogeneous mixture results. Slowly add 2 or 3 tablespoons of water until the consistency is perfect.
It can be accompanied with Arabic bread, carrot sticks or chopped raw vegetables.
Eat as a snack or in the preparation of Arabic sandwiches.
Store the homemade chickpea cream in an airtight container and refrigerate, it will last up to a week.
