Grandma's recipe # 2: Stir Fried Pumpkin With Dried Shrimp (蝦米炒金瓜)
I always believe that scrumptious food often comes with a sophisticated recipe. However, there are always some exceptions. And one of them is the stir-fried pumpkin with dried shrimp, which is one of the classics of my nanny's recipe.
好吃的東西,通常不好做,耗時又費功。然而,這世上有一些食物,有著一種美味,可以例外地,簡單又好吃。以下為大家介紹,我阿嬤食譜之“蝦米炒金瓜”。
Ingredients:
1/4 Pumpkin | 1/4塊金瓜 |
3 cloves of garlics | 蒜頭3瓣 |
3 tbsp of dried shrimps | 蝦米3湯匙 |
1 tbsp of sugar | 白糖1湯匙 |
1 tsp of salt | 鹽1茶匙 |
Direction:
Deskin and deseed the pumpkin, dice it into small little cubes.
Mince the garlic, rinse the dried shrimp.
將南瓜去皮去籽,然後切塊。將蒜頭切碎,蝦米沖洗乾淨,備用。
Heat up the wok, add some vegetable oil, saute the minced garlic.
熱鍋後,倒入菜油,將蒜頭爆香。
Dried shrimps in, saute them with medium heat. Add some curry leaves if you prefer to enhance the flavor.
倒入蝦米,與蒜頭以中火一起爆香。若有咖哩葉,放入一起爆香,風味更佳。
Pumpkin cubes in, saute them for a minute.
倒入金瓜,繼續翻炒一分鐘。
Add a cup of water to simmer the pumpkins.
倒入一杯水,繼續燜煮
To season them, add sugar and salt, cook for extra ten minutes.
加糖和鹽調味,以小火繼續燜煮十分鐘。
Reduction done, ready to be served.
收汁後起鍋。
據說金瓜和南瓜是同一樣東西,只是不同地區不同名字,有高人可以告訴我是怎麼一回事嗎???

確實台灣也叫金瓜,那邊的金瓜炒米粉,哇,有夠好吃。

我这里都是叫南瓜的,叫金瓜我想是因为里面里面的肉金黄色,就改了好听的名字金瓜吧,特别喜欢吃甜一点又有点粉的南瓜,可惜我不是很会挑。
