Ulog #237: Wings with Blue Cheese Dip

After doing for a catering 100 wings last week, I was craving myself some wings too so I got myself 2kgs of wings to cook for my family. We had it for dinner and then some leftovers to go for a 2nd round the next day's lunch.

2kgs of wings is about 2 dozens of wings and that fed us plenty.

For the wings, I marinated it for about 30 minutes with smoked paprika, fennel powder, cumin powder, himalayan pink salt, Sarawak black pepper, and some oyster sauce. I also use some lard to tie the whole marinade together.

I then roast the wings in an oven at 150 degrees celcius for about 45 minutes. You could do this at 180 degrees celcius for maybe half of the time as well but I really wanted to ensure it was super juicy and that the juices stayed in the chicken and not seep out onto the baking tray.

For the dip, I used some water, vinegar, 2 egg yolks, blue cheese and oil. Blitz them with a hand blender and you get yourself a really nice homemade dip. You could replace the vinegar with mustard but I didn't have mustard and had vinegar in hand, so yeah :D
If you want the dip to have more of a mayo consistency then add more oil. For mine it was more a dressing/dip consistency so more water was added.

It was super delicious and satisfying. Much cheaper alternative than getting wings outside but there is the prep involved of cutting the wings and all, thus why you always need to pay more eating outside. Great game day wings either way :D
