Rice stuffed tomatoes
Last Sunday was Mother's Day and I did one of my mother's recipes, this Rice Stuffed Tomatoes, was just a way for remember her....because she is no longer with me 😢

INGREDIENTS for 4 SERVINGS
- 4 medium to large tomatoes
- 5 tablespoon of rice
- 2 1/2 tablespoon of Parmesan cheese
- 2 small can of tuna (optional)
- 1 tablespoon minced fresh basil OR 1 teaspoon dried basil
- salt
- olive oil
Start making the tomatoes shell:
cut a thin slice off the top of each tomatoes, and set it a side, now scoop out the pulp and juice and set a side, sprinkle the inside of tomatoes with salt.
Chop the pulp into a bowl, discard the seed, then add the rice, the Parmesan cheese, the tuna, the basil, salt (as you like), olive oil and mix all together.
Now with a spoon fill the tomatoes shell and replace the tomatoes lid on each one
Place in a baking dish, drizzle entire dish with olive oil and bake 375F degrees for about 30 min Or until the rice is cooked
I like to add some patatoes...just chop and season with salt, olive oil and a tablespoon of breadcrumb, and put it in the dish between the tomatoes!
This dishes can be prepared ahead and baked later....OR...you can baked now and bring with you for a picnic because it is good even cold!

Those look great! Sometimes I make stuffed bell peppers and I will seasoned meat, different vegetables ,and rice in those.
They look delicious,I love tomatoes and rice. Have you tried this with capsicums, they taste great too?
I think yes but I usually fill the capsicum with ground beef!!
