Mushy pesto pumpkin pea gnocchi
I've used this many times, I find this recipe correlates with happiness well. This makes four (4) very generous meals. Sometimes I add spinach or kale and add pepper for personal taste. Hope you can make it work since it took me a few attempts at achieving perfection.
requirements:
approx quarter butternut pumpkin.
1 pct gnocchi.
1 pct pesto sauce.
4-5 Large mushrooms or Equiv.
50g butter/marg.
1/2 cup peas.
50g parmesan cheese.
- Steam a few cups of cubed pumpkin for twenty minutes, after ten :
- melt some butter
- saute some mushrooms for five minutes.
- Throw half a cup of baby peas in for some colour.
- Remove the pumpkin and place with mushrooms/peas and use the water for the gnocchi
- five minutes later the gnocchi should have risen as is ready for adding.
Fold in pesto sauce
Fold in some parmesan cheese and your good.
- This is served in bowls for perfect enjoyment.
