“Mango Float” Creamy Mango Icebox Cake | VIDEO
Hello my beloved Steemians! How is your day? Here in my country it's pretty hot since it's summertime. Going to the beach and pool would be a nice idea to refresh and enjoy summer and also with a slice of this mango icebox cake, your summer is gonna be great. :-)
So today, I am making this famous dessert famously known as "Mango Float" which is made up of fresh ripe mangoes, all purpose cream, condense milk and graham crackers.Some people call it mango float, mango cake, graham cake or mango tiramisu.

This dessert is very popular in our country. It's always present in the menu specially during Christmas & New year, birthdays and whatever celebrations. There are even mango floats sold in single servings at grocery stores, or ice mango float candies around the neighbourhood.
In our family occasions, we always have mango float on the table since it's my bro's favourite. He would always request that so I'm basically kind of used to the recipe and for many times already made my own versions and also well experimented the procedure.
If you’re vegan, you can substitute all purpose cream with coconut cream and condensed milk with coconut milk and coconut sugar.
So here’s my recipe.
INGREDIENTS
- 3 ripe mangoes cut into cubes
- 3 tbsp coconut sugar
- 1 tsp vanilla
- 250 g all purpose cream / coconut cream (vegan)
- 1 can sweetened cream or condensed milk (coconut milk + coconut sugar)
- 1 pack graham crackers
- 1/2 cup crushed graham crackers
- almonds and desired nut toppings
DIRECTIONS
- In a blender, add mangoes, coconut sugar and vanilla. Pulse until smooth. Set aside.
- In a bowl, mix all purpose cream and condensed milk and whisk until well combined and fluffy.
- On a cake tin, layer graham crackers.
- Spread a third of cream condensed mixture on top of graham crackers using a spatula.
- Repeat step 4 and 5.
- Pour mango mixture and spread evenly on top of cream.
- Sprinkle generous amount of crushed grahams on top and pour remaining cream.
- Shower with your favourite nuts. Refrigerate and serve.

I have to be honest with you guys. I don't really call it vain or self adornment but I am just addicted to watching my food videos. It feels like a meditation and a therapy for me. It is basically the sound and art in the kitchen. This is an epic dessert! I'll definitely try it. Will have to change some ingredients as I'm vegan but I'm sure it will have no impact on that taste :)

I love coconut so most of the time I always use it when I'm cooking and baking. But this time I went against my rule. Haha.
