Avocados stuffed shrimp
The avocados stuffed shrimp is a kind of salad, but unlike this one , is made on the same shell avocado. It is very refreshing and very tasty. We will only need a small handful of ingredients to make it and we will have it ready very quickly.
Ingredients
- 4 medium and mature avocados
- 1/2 onion
- 400g of cooked prawns
- Olive oil, vinegar and salt
- Optionally 1/2 tomato
Preparation
1.- The first thing is to cut the vegetables. Peel and chop the onion and also chop the tomato (without peeling, better, although if you do not like it you can peel it). We put it on a plate
2.- We do the same with prawns. We peel and chop them, reserving 12 of them, that we are not going to chop because we will put them in the end. The prawns that we have chopped we put them next to the vegetable
3.- Once this is done, we cut the avocados in half. Remove the inner nugget and extract all the pulp, trying not to break the shell. We reserve the pulp next to the prawns and the vegetables. We leave this at the end because the avocado oxidizes very quickly, obtaining a dark color
4.- We align to the taste. We put a pinch of salt, a drizzle of olive oil, and a splash of vinegar. The vinegar will preserve the avocado, preventing it from oxidizing so quickly. But still, this is a recipe that will not last more than a few hours in the fridge. Mix well all the ingredients until there is a homogeneous mixture
5.- We go back to fill generously all the avocados with this mixture. We'll have skins left over so, fill in those that have been more complete. Of 4 avocados will give us to fill between 6 and 7 halves of shells, depending on how much quantity eches each half.
6.- Once this is done, put two prawns on top of each half and reserve everything in the fridge for one hour before eating. So that it is as fresh as possible!
