Pinoy Pasta ala Longganisa

Filipino people like to eat a lot. In fact, we have morning snacks, mid-afternoon snacks and sometimes midnight snacks. We have different noodle recipe that we eat mostly as snack😜but the most popular is pancit which we inherited from the Chinese. We also have different recipe of pancit. Some with dry noodles, noodles with different sizes, some noodles come with soup mostly an adaptation from Chinese cooking.

But for today, I'd like to share with you a pasta recipe with Pinoy twist, Pasta ala Longganisa. Longganisa is a Spanish sausage similar to chorizo but fatter, softer and tastier. Longganisa from different region has different tastes as well. Up North we have Vigan Longganisa that is a native of Ilocos. The taste is a bit salty and garlicky. In South of Luzon we have also a popular longganisa from Lucban Quezon, longganisang lucban is somewhat sour and garlicky in taste. In Visayas, we also have the Cebu chorizo tiny pieces of longganisa which is sweet and tastes like hamonado. I like it better than the first two.
However, I don't have these popular type of longganisa as of the moment and I prefer to use a sweeter version which can be bought in almost every wet market in the Philippines.

So here are the ingredients:
Olive oil
Garlic, chopped
Tomato, julienne
Longganisa, chopped

Cooked pasta ( you can use spaghetti or fettuccini)
Rosemary leaves ( I used mccormick)
Thyme leaves ( I used mccormick)
Salt and pepper to taste
Cayenne pepper (optional)

What you will do is saute the chopped garlic in a pan with olive oil until golden brown

Add the tomatoes, and the chopped longganisa.

Allow the longganisa to cook for 3-5 minutes. Then you can now add the cooked pasta season with salt and pepper to taste. Add some thyme and rosemary leaves. I like mine with cayenne pepper because it gives a nice spicy kick to the pasta. You can leave it out if you want to taste the sweet and salty longganisa pasta. But our pasta would not be complete without some fresh parmesan cheese.
