🍃🍝 How to make Vegan Italian Sauce - Fresh Pasta with Vegan meat Sauce!
Today the Cook offers Vegan tofu ragu, suitable for vegetarians and vegans. The tofu can be prepared in many different ways and the sauce is something that could interest those who do not eat meat.
The fresh pasta with water is of the normal fresh homemade pasta without eggs, a very light pasta, perfect for those who can not eat eggs.
INGREDIENTS FOR PASTA WITH WATER:
00 flour: 100 gr.
water: 50 ml. about
salt: 1 pinch
PREPARATION:
In a bowl, put the sifted flour and add a pinch of salt.
Measure the water to be about 50 ml. for every 100 gr.
I advise you not to pour all the water into the mixture but to pour a little at a time.
When you have obtained a single, firm dough, do not add more water, put the dough on the pastry board and knead it with your hands.
When the dough is smooth, wrap it in the plastic wrap and put it in the fridge for about 30 minutes to rest.
After this time, your pasta with water will be ready to be made, take a simple rolling pin, roll out the dough and make the format you like.
The veg pasta is ready!!!
INGREDIENTS FOR SAUCE VEG (4 people):
1 onion
1 carrot
1 stalk of celery
30 gr of extra virgin olive oil
350 gr of tofu
40 gr of red wine
200 gr of tomato sauce
40 grams of water
salt when needed

PREPARATION:
Chop the tofu as if it were minced meat, cut into pieces and mince in a pot celery, carrot, onion.
Add oil to the mix of vegetables and cook for 10 minutes.
Add the wine and the shredded tofu and cook for another 2 minutes, then add tomato sauce, water and salt.
Let cook everything in the pot for 45 minutes over low heat , the sauce should simmer, not boil.
The sauce is ready to use it to dress pasta or other.
