🌱 The fresh pasta with water called" STRASCINATI" is of the normal fresh homemade pasta without EGGS, a very light pasta, perfect for those who can not eat eggs.
INGREDIENTS:
00 flour: 100 gr.
water: 50 ml. about
salt: 1 pinch
PREPARATION:
In a bowl, put the sifted flour and add a pinch of salt.
Measure the water to be about 50 ml. for every 100 gr.
I advise you not to pour all the water into the mixture but to pour a little at a time.
When you have obtained a single, firm dough, do not add more water, put the dough on the pastry board and knead it with your hands.
When the dough is smooth, wrap it in the plastic wrap and put it in the fridge for about 30 minutes to rest.
After this time, your pasta with water will be ready to be made, take a simple rolling pin, roll out the dough and make the format you like.
I used an iron rod called "caturu" , with a skillful blow given with the palm of the hand, the dough is wrapped.
