Mole enchiladas after midnight!
Just experimenting with some enchiladas. Made a pepperjack, sour cream chicken inside (some guac, onions, shallots, garlic, smoked ancho, tequila, a few other things), then slathered in avocado, mole sauce, and cheese. Some crock potting and baking involved, ended with a hi broil.
