Risotto delicious and Italian
Hello steemians as you know I really like Italian food, so I decided to share with you this risotto recipe. This recipe for risotto with shrimp is really tasty.
Risotto with shrimp is an elegant and perfect first plate for any occasion, perhaps accompanied by a good bottle of white wine.
The preparation is very simple, but the important thing is that the shrimp must be in a good quality and preferably not frozen because heads and shells are used for the broth.
Risotto with shrimps recipe
Ingredients for 2 people
- 180 gr. of carnaroli rice
- 20 fresh shrimps
- 1 L of broth
- 1 small shallot
- 1/3 of a glass of white wine
- Extra virgin olive oil.
- salt
- Little parsley
Preparation time: 20 minutes
Cooking time: 16 minutes + 1 hour for reducing the broth.
Total time: 1 hour and 36 minutes
Let´s start.
Preparation:
Prepare the broth from about 2 liters of cold water. I used an onion, two stalks of celery and two carrots in addition to the heads and shells of the shrimp.
Once the shrimps have been shelled, remove the black fillet with the help of a small knife.
Cut almost all the shrimp into small pieces and leave 5 or 6 whole.
Brown the chopped shallot in a few circles of oil.
Add the rice and toast it for a few minutes. Salt it lightly.
Add the white wine and let it blend over a high flame, stirring continuously.
At this point begin to add the boiling broth (perfectly filtered), turning and being careful not to leave the rice too dry.
When almost cooked, add all the shrimps a little oil and a little minced parsley. Season it with salt, turn, cover and let stand a few minutes.
Serve your risotto with some shrimps and that's it!!
Last week I made a tiramisu but I did not post it so maybe I will do it again on this weekend.
