I have never had eggs Benedict, but I have always wanted to try them. I am typically a sunny side up guy, so it would probably just be a matter of whether I could handle the richness of the hollandaise sauce or not. I will have to make it a point to try them someday when I see them at a restaurant. Hopefully they will turn our better than these ones. Passing toast off as an english muffin is a huge no-no. They don't even have the same flavor. I've gotta believe that changes the whole feel of the dish...
well if you like the yolks runny Eggs Benedict is pretty awesome! Some places overdo the sauce to compensate for the fact that they don't know how to make the actual dish (this place did that)
Eggs Florentine is quite similar but uses spinach instead of meat as an additive. IF the eggs are done correctly, i think I may actually like that version even better.
