Fried eggplants with hot walnut butter
Hello everybody! I want to share with you an interesting recipe. Since I did not have all the necessary products, this dish, based on the Georgian cuisine, had to be changed a little;) So, we need:
Eggplant - 5-6 pieces
Walnut - 1 glass
Dill greens - 1 bunch
Garlic 4-6 - cloves
Ground red pepper - 1/2 teaspoon
Cumin - 1 teaspoon
Coriander seeds - 1 teaspoon
Turmeric - 1 teaspoon
Salt, pepper to taste
Water - half a cup
Cut the eggplant into plates, about 1 cm thick. Wipe off with salt and leave for 20 minutes, then rinse, squeeze, drain and fry from 2 sides in vegetable oil. Put on a paper towel to remove excess oil.
All the ingredients, except for greenery, throw into the blender and grind, adding water, to a homogeneous mass. Add the chopped greens.
On cooled eggplants spread paste.
Serve with rice or other favorite side dishes. Also very tasty as a cold snack.
