Saltimbocca

Saltimbocca — a small meatloafs or envelopes with prosciutto and sage inside, which are fried very quickly and are eaten immediately from the pan, accompanied by a delicious sauce.

Number of servings: 2-3
Ingredients:
- Beef, 300 gr.
- Prosciutto or similar raw ham, 70 gr.
- Dry white wine, 200 ml
- Butter, 30 gr.
- Sage leaves
- Black pepper, salt, olive oil
Meat cut into portions and beat to a thickness of 5-6 mm.
Spread the prosciutto with sage leaves on half of each piece.
The second half is covered, salt and pepper.
Warm up in a pan 10 grams. 1 tablespoon of olive oil, fry the meat on high heat for literally one and a half minutes on each side and set aside on a warm plate or Board to keep warm.
Pour the white wine into the pan and evaporate to the consistency of the sauce, thickening with the remaining oil.
Serve with strained sauce. Decorate can be slightly toasted in oil leaves sage, and in as a garnish set rice or other vegetables, although Saltimbocca doesn't need anyone's support ).
