Mushrooms with vinaigrette.
A rich entry, easy to make, economical and very healthy, are the Vinaigrette Mushrooms. It is an alternative, that you can prepare with few ingredients. The best thing is that mushrooms are a source of nutrients and vitamins for health. In addition, you can make creams, sauces, pâté, etc. It is an excellent companion for fish, meat, or chicken.

INGREDIENTS:
- 300 gr of mushrooms.
- 1/2 onion
- 1/2 paprika
- 6 cloves of garlic
- Oregano to taste.
- 2 bay leaves.
- Vinegar to taste.
- Salt.
- Oil to taste.
PREPARATION:
Prepare the vinaigrette, the one bowl add the oil, vinegar, crushed garlic, oregano, onion and paprika chopped into squares, salt and the two bay leaves beat with a fork so that all the flavors are integrated, reserve.
- Clean and file the mushrooms. In a pot with water, salt and a splash of vinegar, wait for it to boil, add the rolled mushrooms for about 6 minutes. Remove from heat, strain and let them rest.
- In a pan with oil add chopped onion and crushed garlic, sauté until the onion is transparent, add the mushrooms for about 4 minutes, stirring constantly so that they are impregnated with the flavors, rectify the salt.
- Add the mushrooms to the vinaigrette, stir in the preparation so that it becomes impregnated with the flavors, rectify the salt, leave it for a while, then serve with crackers or toast.
