Mini-Eggplant Pizzas.
They are tasty, easy to make, with few ingredients, versatile because they adapt to the taste to prepare them, as a starter, they are ideal to surprise family members and visitors. Mini-Pizzas from Eggplant are an option that are very economical and practices.

Ingredients:
- Eggplant.
- 1 tomato.
- 1/2 Onion
- Pizza sauce
- White cheese.
- 1/2 paprika
- Oregano.
- Salt.
- Oil.
Preparation:
- Wash the eggplant, cut the slices with a thickness of approximately one centimeter, put salt to leave for a while so that the bitter go, approximately 15 minutes.
Chop tomatoes in squares, onion and paprika in strips, grate the white cheese.
After 15 minutes, dry the eggplant, and heat the plate, put a little oil to it and begin to place the slices of eggplant, brown on both sides.
- Next, place a base of pizza sauce on each slice of eggplant, then the grated white cheese, the paprika in strips, the onion, the diced tomatoes and finally the pinch of oregano, salt to taste and a little pin of oil to each mini - pizza.
While heating the oven, put the tray, until the cheese melts, usually about 10 minutes.
After minutes the Mini-Pizzas of Eggplants are ready to surprise the guests.
I used coconut milk and arrowroot starch and had no issues following the directions exactly.
Can these freeze well? prior to adding the pizza toppings?
