Flaming Japanese Scallop at Wabi Sabi Restaurant, Bangkok...
As a fan of scallops, as soon as I saw this on the menu I knew I had to try it. It wasn't cheap, with each of the large scallops costing the equivalent of about $18. When it came out I wasn't disappointed.
The oyster was served on a bed of rock salt and delivered flaming to the table. We allowed it to cook for a minute or two in a light Japanese sauce, and it had some shallots sprinkled on top.
The texture of the scallop was firm and the flavour was fresh, with just the added hint of the sauce in which it was cooked. Perfect !!! Of course the only thing to do was wash it down with a glass of fresh draught Asahi beer.
