LINGUINI WITH SPICY, FINGER-LICKING LAMB MEATBALLS

This is really quick if you're tired, or short on time yet so lush and flavoursome. Can add a tin of caneloni beans for added protein
Mince: lamb 500g, salt pepper, Worcester sauce 1tbsp, handful of bread crumbs, 1tbsp oyster sauce, 1 large egg, chilli flakes to taste, 3 large cloves garlic crushed,
Knead and form into small balls.
Pop onto a tray and bake for 15 mins until browned all over @ 190°C. Reserve juices and all.
To make the sauce:
2 tins rich, good quality chopped toms
Crushed garlic 1tsp
Salt pepper,
fresh basil leaves
1 tbsp rapeseed oil
Heat a pan. Add oil and garlic. When slightly brown, chuck in tom's and seasoning. Cook for 10 mins on medium. Increase heat, and reduce until It forms a thickish sauce. Gently put in meat balls and juices, hand ripped basil leaves and stir only once and leave covered on low for 5 mins for everything to infuse.
Boil linguini/ spaghetti while sauce is cooking..pile into bowls and serve with grated parmesan
