COOLING MANGO AND WHITE CHOCOLATE CHEESECAKE
I made this to celebrate Eid last year and it went down a treat with all my guests. It's incredibly lush and mouthwatering and I'll definitely be doing a repeat of this on Sunday

Heres what you will need:
200g digestive biscuit
100g melted butter
300g cream cheese
280g double cream
200g melted white chocolate
1 tbsp vanilla flavour
1 tin mango pulp ( Indian stores have them)
1 tsp Lemon juice
Few spoons icing sugar
This is what to do:
- lightly grease the base of your tin
- break your biscuits into crumbs then add in the melted butter and press it into your tin. Put it in the fridge to set.
- melt the White chocolate and set aside to cool down
- whisk double cream until thick but take care it doesnt separate, then fold in the White chocolate.
- in a separate bowl whisk the cream cheese with few drops of Vanilla.
- now bring everything together in one bowl fold the whipped cream into the cream cheese bowl.
- spoon into the tin and put it in the fridge to set.
- blitz mango with few spoons of icing sugar and lemon juice.
- layer it on top of the cream then put it back in the fridge to set ideally over night.
