How to Make a Delicious Swimming Celebration Cake - fresh fruit and cream inside!
This morning I posted some pictures of the cake I made for the celebration of the swimming certificates. It is a very tasteful and easy recipe.
Let me share now the details how to make the cake by yourself!
What do you need? The ingredients
for the cake:
- 3x egg white
- pinch of salt
- 100 gram sugar
- 5 egg yolks, whisked
- 80 grams of flour
- 20 grams of corn starch
For the Filling:
- 300 ml of cream
- 40 grams of sugar
- blueberries, raspberries
For decoration:
- marzipan / fondant: blue (different shades), orange, pink, yellow, .... what you like!
- skewers
How to build it: Directions
For the cake:
Step 1. preheat the oven to 200C.
Step 2. Whisk the egg whites with the salt . Add, very slowly, the sugar until dissolved and no grains.
Step 3. Add the whisked egg yolks and mix. Add the flour and corn starch.
Step 4. Prepare 1 or 2 baking plates with parchment paper. Spread the mix out in a 1 cm layer. You can also make three layers from the size of a baking pan (20 cm)
Step 5. Bake 8 minutes until golden brown. The dough will rise a little bit and smell terrific!
For the Filling:
Step 1. Mix the cream with the sugar until the right consistence.
Step 2. Clean and dry the berries.
Building the cake and decoration:
Step 1. Use a baking pan of the size 20cm and cut three parts from the cake.
Step 2. Build the cake in layers: 1 cake, then cream + berries, cake again. Close up with the cake and a spread of cream.
Step 3. Roll the fondant to the right size ( very thin ) and dress the cake.
Step 4. Make the figures( look at the dimensions), be creative. All parts that need to stand out have a SKEWER stick so that the legs, the arms, the googles stay in position.

I have question here- how was the taste?
It is a fresh whipped cream cake, with berries. So its light an tender. I did not add to much sugar on purpose, while the fruits bring a lot of taste. The fondant frosting is a bit sweet to my taste.
