Sounds nice, I make similar meals sometimes. I prefer a brown sauce though.

Here is a free quick receipe for you:
Very nice to go with fried chicken (chicken legs ect)

Peel raw potatos (put them in water when peeled, so tthey dont go brown)
Then cut the peeled potatos into thin (2-3mm) slices (if the potatos are really big, cut them in half or quarters first)
Now put them in a big frying pan. A non-stick pan may help, but always use some oil anyway. Put some salt in, too, to your taste.
Now fry them with moderate heat. Turn them occassinally, so they dont burn. Its a delicate process, since it takes about 20 minutes to get them done. But you are a experienced cook, so I guess you can handle that.
Now the trick: about 5 minutes before they are done, distribute a good dose of sweet red pepper (Paprika) powder in the potatoes. Don't be stingy with it, make the potatos nice red when you turned them over. But watch out: the sweet type, not the hot type! And add a bit of normal ground black pepper (real pepper) if you like.
Now keep frying and turning over carefully until the potatoes are done and cross. Caution, the Paprika powder easily burns!

If everything has worked as planned, you have a wonderful looking and tasting side dish, to chicken as I said, but you can try it to other meat or fried fish of course. And quiet cheap and easy to make as well.

My pleasure! Just have made it yesterday, together with fried turkey meat.
Tasted great - only problem was, I had soft boiling potatos instead of firm boiling ones. So they got a little mashed from the stirring. But thats only a cosmetic thing, the taste was still great.
