Baked Sweet Potatoes Boats - Delicious, Sweet and Healthy
Baked Sweet Potatoes with Avocado are DELICIOUS and Healthy.
Great for one of those days that you aren't really sure what you'd like to eat but you're very hungry, I'd recommend you make yourself this sweet potato with avocado.
These are tasty, sweet and full of flavour.
You could always add a piece of meat on the side ;) but I prefer no meat.
I'm not a vegetarian but I like my veggies very much!!!!
Start by getting your favourite ingredients together.
What I used for this tutorials,
you can see on the picture below:
- sweet potato
- avocado
- orange pepper
- red onion
- swiss cheese
- green onions for garnishing
- salt, black pepper for taste
Bring water to a boil. Add sweet potato, cover, and steam until tender, 7 to 10 minutes.
During that time chop your other ingredients into small pieces.
Split open and scoop out the inside.
Now, put together all of your veggies.
Mix them gently.
Do not overmix!!!
And, then load them back up :)
Top them with swiss cheese and black pepper.
Bake them in the oven set to 400F for about 10-15 min.
Make sure the cheese melts before you take it out of the oven.

And now you're ready to enjoy your creation :)))
Baked Sweet Potatoes are great for lunch.
These loaded boats will fill you up for hours!!!
