Vegetable Dinner 🥦🥕🥔

Hello!

I've started trying to cook a lot more, mostly vegetables, for my meals lately.

It helps a lot with saving money as I'm not just buying ready meals or more processed things- it also helps me feel healthier too!
(Although, I do still enjoy getting some snacks when I'm able to...)

Buying bags of vegetables such as potatoes, carrots and broccoli also creates at least 5-6 meals for one person, from my experience, which is great! I try to always have vegetables in stock, frozen vegetables are a big staple in my freezer too!

I used a template on Canva to create the picture layouts for my post! I went with a recipe/cooking aesthetic.

For this specific meal that I ate during dinner time, I had:

3 carrots,
3 long stem broccoli,
frozen vegetables (sweetcorn, peas etc.).
tomato and basil pasta sauce,
and 6 baby potatoes.

I tend to prefer long stem broccoli because I find it easier to cut into smaller pieces! Regular broccoli is too tough for me sometimes.

The potatoes go in for 15 minutes, the carrots go in at 10 minutes and the broccoli goes in at 8 minutes!

Firstly, I washed and then cut up the potatoes.

I cut them into smaller pieces as I went them to cook faster! These go into the pot first as they need the longest time, 15 minutes, to boil.

Then, I washed and cut the carrots into small disks.

I find it a bit harder to cut carrots as they're quite tough, so I did struggle a bit to cut them smaller but I did my best.

These went in after the potatoes as they need 10 minutes to boil! I probably overdo them a bit but I want to make sure they're thoroughly done!

After that I washed and cut the broccoli into smaller pieces.

I wish I added more as I really love broccoli! I think it's so tasty, I think next time I'll add more broccoli and less carrots. 😁

These needed at least 5-8 minutes to boil, so I added them in for 7 minutes!

I also added a mixture of frozen vegetables into the mix because I wanted some peas and sweetcorn- though I ended up not getting much sweetcorn from the amount I poured in, lol. These went in for 4 minutes.

To add a bit of flavour to the mix, I added some tomato and basil pasta sauce- I love the flavour of this one!

I'm not opposed to just having the plain vegetables, but I do like treating myself to some more flavour using some sauce or seasonings.

My partner had some chicken nuggets with his meal so he gave me some pieces to add to mine as I was lacking a lot of protein.

You can never go wrong with some chicken nuggets! 😋 I really enjoyed them.

I really enjoyed this meal! I thought it was very filling and it left me satisfied.

I've been enjoying cooking like this more lately, it's a lot healthier and cheaper for me compared to buying ready meals and stuff like that.
