How to make UKRAINAN BORSHCH! MY MOTHER'S RECIPE WITH MUSHROOMS

Today my mother and I cooked delicious Ukrainian borshch
I decided to share our recipe with you
So what do we need?
Ingredients
beets - 1 pc
carrots - 1 pc
cabbage - about 200 - 400 gr
potato - 4-5 pcs
onion- 1 piece
beans - 100 gr
mushrooms (any) - 100 gr
sour cream - 100 gr
tomato paste - 250 gr
salt - to taste
Spices (any, preferably dill, parsley, coriander) - to taste
water -2 - 2,5 liters
frying oil - 0,5 spoons
First of all you need to put beans in the water for 12 hours
and cook around 1,5 - 2 hours in 2 liters of water.
Separately, you need to cook mushrooms around 20-30 minutes and add to beans.
Add some salt
Than need to cut potatoes and also put in the pan
then chop the onion and put in the heated frying pan with hot oil.
During the time it frying need to grate the carrots and beets.
When the onion is browned, add the carrots and beets inside and mix.
Add 10 spoons of broth from our casserole.
And cover it. Stew for 12 minutes.
Meanwhile, you need to cut cabbage and throw in the broth.
Than add the sour cream to the pan. Stew for 5 minutes
Then add the tomato paste to the stewed vegetables and cook for another 5 minutes.
After that, put the stewed vegetables in a saucepan
Our borsch is almost ready.
Now you need to add spices to taste - pepper, garlic, fennel, bay leaf, coriander
That is all. Our borshch is ready!
Pour into plates, with sour cream and greens
Serve hot with toast, garlic and bacon!
