Ingredients:
for the dough:

  • wheat flour - 3 stack.
  • chicken egg-1 PC .
  • vegetable oil - 3 tbsp
  • water-1,5 Stak.
  • salt-1 tsp.

for the filling:

  • beef-0.7 kg.
  • lamb-0.3 kg.
  • onion - 2 PCs .
  • cilantro - 1 bunch
    Sol "Svan" - 1 tsp.

Preparation:

  1. Sift half the flour so that the slide turns out.
  2. Make it deeper and add vegetable (olive) oil, egg.
  3. One hand knead slowly, and the other pour cold salted water. The result is a soft homogeneous mass.
  4. Cover the dough with a towel and leave it to rest for 30 minutes.
  5. After rest, add the remaining flour, knead the dough for 10 minutes.
  6. Cover again with a towel and set aside for 30 minutes.
  7. After that, knead again the dough should not stick to your hands. If still sticking, add more flour.
  8. Chop the meat, coriander, onion.
  9. Salt with Svan salt, mix everything and add some water (about 0.5 cups) to the stuffing. Don't pour it all at once, but in parts, all at once stirring.
  10. From the dough roll out the layer, make circles and roll them into thin pellets.
  11. Put the minced tablespoon and semipelite in a special way.
  12. Boil in salted water in a large container.
  13. Cook khinkali for about 15-20 minutes.
