Though I love eating plants for all sorts of reasons, one of them is definitely their look. Or is that just me? You eat with your eyes too, right? We sure do.

Salads as these not only look beautiful with all their colors they are delicious and jam-packed with good-for-you nutrients. The more colors you add to your plate the more diversity in antioxidants and other beneficial plant compounds you'll get.

Years ago I started swapping my lunch sandwich for salads and never looked back. I just love their flavor and crunch. Though we still have a sandwich on rare occasions, I prefer my salads and soups for lunch. I always have the feeling that these give me more energy and boost my mental clarity while working.

Green Bean Celery Salad With Maple Balsamic Vinaigrette

Ingredients


For the salad


1 cup green beans, chopped into small pieces
1 cup celery, chopped into small pieces
ยฝ cup spring onion, finely chopped
1 cup red cabbage, shredded
2 cups salad greens (we used iceberg lettuce), torn
1 cup tomatoes, chopped
Roasted sunflower seeds (garnish)

For the dressing


Balsamic vinegar
Olive oil
Honey
Sea salt and pepper

Directions


  1. Heat cooking oil over medium-high to high heat. Stir-fry celery and beans for 5-7 minutes. I like them when they are still a bit crunchy.
  2. In a small bowl whisk together all dressing ingredients until well combined.
  3. Add salad ingredients to a bowl. Toss to combine and drizzle with balsamic dressing. Top with roasted sunflower seeds.

Looks great! I don't eat honey but I'm sure I could sub for agave nectar or maple syrup!

I actually used Maple.... little typo there ;) Though I often make an exception to my vegan diet for wild Cambodian honey locally sourced from the jungle when I can get my hands on it. It' s been a while though!

That looks so delicious :) I love a good salad too. I usually get hungry pretty fast after though. Then again, I'm always hungry :D

Hehe... make them big enough and add some healthy fats like oils, seeds, nuts, avocado, etc... always works for me ;)

Haha yeah :) Don't usually have seeds or nuts in. Should give that a go :)
