๐๐ Green Smoothie Of The Day: Minty Pineapple Arugula Green Smoothie ๐๐
Good morning fellow steempunks. What are you up to on this beautiful Saturday? Here it's the last day of the 3-day water festival and boat races. Cambodian festivities are a lot of fun and people, but they are hectic as well. No real schedule... so it was hard to know when to push your way to the river and cheer for the boats of the monks next door...
Anyway.... food, drinks, good people, sun, and tons of happy atmosphere. I'm ready for another lovely day. I'll make a post with pics and all funny moments later ;)
Today's smoothie is a little special and more green tasting than usual. Afer year of drinking green smoothies, I convinced my hubby and once in a while, he doesn't mind it when I make it extra green tasting.
If you have never tried arugula in your green drinks that I can highly recommend it. Its peppery flavor is such a lovely addition. Apart from adding tons of flavor, arugula or rocket lettuce packs a wide range of good-for-you plant nutrients such as protein, thiamin, riboflavin, vitamin B6, pantothenic Acid, zinc, copper, dietary fiber, vitamin A, vitamin C, vitamin K, folate, calcium, iron, magnesium, phosphorus, potassium and manganese.
Though you could swap the cup of spinach for another cup of arugula, if you have picky eaters in the house (like my hubby), it might just taste to green.
Ingredients (serves 2 for breakfast)
1 cup arugula
1 cup spinach
Fresh mint to taste
Fresh turmeric and ginger to taste
1 small banana, frozen
2-3 passionfruits
1.5 cup pineapple
1/2 avocado
2-3 cup water
2 tbsp extra virgin coconut oil
Optional toppings: chia seeds and goji berries
Directions
- Blend spinach, arugula, mint, and water until smooth. Add remaining ingredients and blend again. If the smoothie is too thick, add more water and blend again. If you have a high-speed blender you can throw in everything at once.
- Optional: Top with chia seeds and goji berries or other superfoods/toppings you like.

What a nice smoothie! Mint and arugula go so well together. Like banana and pineapple, lol! When they are all together -- yummmm! Arugula may be an acquired taste, but once somebody likes it, they really like it!

Hi my dear! Enjoy with the Cambodian festivities, you became specialist of the green smoothie, this one i find it more healthy and tasty, it contains shia seeds and avocado,
And bananas , arugula and spinach, all these elements give us so much energy to start our day actively.
