Just Something To Warm You Up During This Winter days - Butternut Squash Soup
Is it snowing where you live also? When I look out the window all I see is snowflakes falling from the sky and it looks fantastic. That is why I have decided to post this butternut squash soup recipe with curry and ginger. Just a little something to warm me up. I hope it warms you up also. Bon Apetit friends.
Ingredients:
1 small butternut squash
Pinch of curry
1 medium onion
1 tsp fresh grated ginger
3 tbsp vegetable oil
Pinch of salt
Dash pepper
3 cups vegetable stock
1 tbsp finely chopped parsley
½ cup sour cream
Yield: 3 servings
Preparation:
Peel and cut muscat pumpkin into 2 cm cubes. Peel and slice the onion.
Heat 2 tbsp of vegetable oil in the pan and place in sliced onions. Sauté over medium heat for 5 - 8 minutes until yellow.
Add diced pumpkin and sauté stiring for 4 minutes
Pour 3 cups of vegetable stock over the mixture, add curry, grated ginger, salt, pepper and cook for 10 – 15 minutes until pumpkins are tender stirring occasionally.
Blend with immersion blender until smooth.
Serve into soup plates and top with sour cream and freshly chopped parsley.
