DRIED DOLMA WITH OLIVE OIL


Hey yo everyone 🐦 

I will describe you how to make one of the famous dishes in Turkey the Dolma. I cook this in my kitchen and wanted to share this filling delicious dish with you. I hope you all enjoy it at the end. Also I hope you all decide to cook this in your kitchens too.  😉

Background : This food may be popular among other cultures too but dolma's history stands back to central asian nomadic Turks who dried the food in summer abundance and stashed them to eat in winter.

♦️Dolma means filled or stuffed in Turkish. 

Also Dolmak means to Fill.♦️

Note : By the way drying process may be quite hard because you can't dry this in damp regions but I don't really know if you can find them in your region at stores or bazaars. If not, I can post another topic telling you how to dry peppers and eggplants.

Let's start 💕

Ingredients 

  • About 30 dried peppers or eggplants
  • 3,5 cup of rice
  • 3 peppers
  • 4 onions
  • Little parsley
  • 2 table spoons of tomato paste
  • 1 table spoon  (mint, blackpepper, basil) each
  • 2 tea spoons of salt
  • Lemon half
  • 1 tea cup olive oil
  • 3 tomatoes for to cover peppers or eggplants later on

Process

✳️First, put all your dried eggplants and peppers into the cooking pot. After adding water on it turn on the stove.

✳️When it boils, turn down the heat a little bit and wait till peppers-eggplants get tender. 

✳️Peppers will soften more quickly than eggplants that's why you should take them out before eggplants. Wait eggplants boil some more and soften. 

✳️After this take all of them out then you may pour the water because we won't need it later on.

The first part is over.


Now we need a large bowl to put all coming stuff into it except peppers and eggplants. 🍜

✳️Use blender to mix the peppers and onions or chop them (blend them until they become very small) Chop the parsley and put all of them them into the bowl.

✳️Then add spices (mint,blackpepper,basil) into the bowl. Squeeze the lemon half onto it. Add the tomato paste and olive oil.

✳️After this wash the rice and drain. Finally put all rice into the bowl. 

✳️Stir them with spoon until homogenised. Now we've obtained the stuffing.

✳️Fill the peppers and eggplants with this mixture using dessert spoon. (When cooking, as you all know rice gets bigger so we will fill 3/4 of them)

✳️After finishing the filling process place filled peppers and eggplants (now we can call them as dolma) into a large pot vertically. 

✳️Cover the dolma's top with the round sliced tomatoes to prevent rice going out and have a nice visual 💖

✳️Add water to the pot. (water will exceed the peppers but not the eggplants) Close the top of the pot with a porcelain plate which is upsidedown.

✳️Then cover the pot with its lid. Boil it for 35-40 minutes. 🕛
