ROAST DUCK WITH APPLES

This roasted duck is to die for. It has sweet and salty taste from honey and oranges. Roasted duck stuffed with apples is a characteristic Russian and Eastern European dish. The apples infuse the duck meat with their sweet, delicate flavour and tame the slightly gamey flavour that can be a little overpowering for some people. You can even bake some extra apples to serve on the side with the duck. Duck has a lot more fat than other poultry, like chicken or turkey. To create a really crisp skinned duck, we will need to render as much of the fat out of the duck as possible. This duck is exceptionally delicious. Serve as for any special occasion or enjoy at your Christmas table!

Ingredients :
1 medium duck
1 orange
1 lemon
3 tbsp of honey
50 gr OR 1/3 cup of butter
1 squeezed orange juice
fresh thyme
1-2 tbsp of 5 chinese all spice
2 green apples
1 onion
3-4 garlic cloves
150 gr OR 1/2 cup of prunes
Oil to coat
salt & pepper

Directions:
Step 1: Grate 1 orange and 1 lemon. Then add 1-2 tbsp of chinese 5 spices, salt and pepper.
Step 2 : Cut apple into quarters and take off the skin. You can also leave the skin on if you wish.
Step 3 : Place all your apples, cut onion ( into quarters), garlic an prunes inside the duck.
Step 4 : Add a bit of oil on the duck, spread it around and then rub the orange lemon 5 spice mix all around the duck. Then turn it around and coat from the other side.
Step 5 : Put your duck onto a baking tray lined with foil. Season the duck again and create few cuts across the duck with sharp knife. Make sure you don't cut too deep, just lightly, this will help fat to escape.
Step 6 : Add fresh thyme and place into your preheated oven. Depending on the size thats how long you will have to cook your duck for. Usually it takes from 1.30 - 2 hours. You should check your duck every 30 min.
Step 7 : 30 min before your duck is ready, take it out. Glaze it with the honey orange glaze. To make this glaze, in a bowl mix orange juice, honey and melted butter. Cook for further 30 min.
Step 8 : When duck is ready you can check by putting skewer inside and if the juices run clear, that means its ready. Cover the duck in foil and leave to rest for 30 min. Glaze again with the honey orange glaze just before serving.
Step 9 : Serve your duck with honey glazed carrots, homemade gravy and roast potatoes. Enjoy!
