French recipe 1 : Salmon marinated with pepper, cream of broccoli, pesto with basil
For this recipe you will need to :
Salmon preparation
- Smoked salmon filet ............... 320g
- Coarse salt ............................... 40g
- Sugar ....................................... 40g
- Voatsiperifery pepper ............. 40g
- Juice and zest of half a lime
- Juice and zest of an orange
Broccoli cream preparation
- Broccolis ................................ a bouquet and a half
- Raw butter half salt churn .... 80g
Garnish
- Basil pesto ............................ 36g
- Cauliflower ........................... 400g
- Hazelnuts ............................. 40g
Salmon preparation : mix all the ingredients of the marinade (coarse salt, sugar, pepper, lemon juice and orange) then let the salmon marinate for 6 hours in the refrigerator.
Rinse, dry and store in a cool place.
Whiten the broccoli in a salted water then mix them with the butter, cool and keep in a cool place.
Grate the cauliflower to obtain a "semolina".
Roast the hazelnuts in the pan, then chop them and add them to the semolina.
Arrange the cauliflower semolina, some cream broccoli, sliced salmon, and pesto tips.
