Easy Gazpacho (raw vegan soup)
Hello guys, I hope you all are fine while I am still recovering!
Yesterday for dinner I had this raw vegan soup for dinner along with a salad and fruits.
Gazpacho is a Spanish soup which is made of refreshing ingredients and perfect for a hot summer day.
This recipe is very fast to prepare and it requires just simple ingredients such as: cucumber, tomatoes, bell pepper, celery, balsamic vinegar, lemon, garlic and fresh basil.
In my recipe I also added some onion and this soup can be eaten along with some bread and hot sauce, but even just the soup tastes amazing.
Ingredients:
1/2 cucumber
5 large ripe tomatoes
1/2 bell pepper (any type)
2 cloves of garlic
1 celery slice
1 tbsp. lemon juice
1/2 onion
3 tbsp. red wine vinegar or balsamic vinegar
Dash of black pepper
1 tsp. fresh basil
Optional: 1/4 tsp. cayenne pepper
Procedure:
- Chop the cucumbers, tomatoes, bell pepper, garlic, celery and onion.
- Put the chopped veggies in the mixer with lemon juice, red wine vinegar or balsamic vinegar and pepper
- Blend until smooth
- Transfer it in a bowl and let it sit on the fridge for 30 minutes.
- Serve and stir in some basil.
