I grew up in a region where the Eichsfelder Stracke [Wikipedia article of something similar], an air-dried Mettwurst is a specialty; traditional "country ham" cannot be had at discounters, but from the villages directly if you have good connections :)
In a different part of the country, a butcher's shop advertised their "Eichsfelder Mettwurst" so my father asked politely if it is really fresh. "Of course", the poor woman behind the counter replied, so my father shook his head in regret. "Then I don't want it."
