Trying out a new recipe

I have learnt so many things in cooking but one thing I can never let go of these lessons is don't stop trying out new dishes. I learnt this when I was still very young from my aunt, who loves cooking. Anytime she's hungry, she enters the kitchen and look out for the available food items and combines them in proportions she feels suitable and behold she always comes out with something amazing. Unknowing to her that a young girl is always watching her every move, I tried out one funny but delicious recipe one day and that is how it all started.

One of my sumptuous recipe... hmmm

Someone may be wondering what this is.
Well, this recipe is a combination of simple readily available ingredients including
Potatoes, eggs, green peas, green pepper, red kidney, carrots, onion, curry and thyme, and tomatoes seasoning

Procedure

Peel the potatoes and rinse very well, dice it into smaller pieces
Cut the carrots and green pepper also dice or slice the onion and tomatoes
Break the eggs and add seasoning then beat the eggs and set aside.
In a frying pan, add few drops of groundnut oil and a few diced onions.
Heat the oil a bit, then add the potatoes and a little water, allow to cook for some minutes. After it has cooked a bit, add the diced carrots and allow to steam for a minute.
After that, add the green peas, red kidney, green pepper, curry and thyme and seasoning. Then stir it together.
Steam for about 30 seconds and set aside
Also in a frying pan, add few drops of oil and fry the beaten eggs.
Now ready to serve
In a plate, place the eggs flat on it and pour the potatoes mixture on top of the fried eggs and sprinkle the diced or sliced tomatoes and onions on it. Ready to be eaten!
