Hello friends, India is a diverse land when it comes to food. From sweet to spicy, hot to clod, light to heavy. The variety is endless. I would share some of them that is must to have when you visit India.

Thali

Thali is not a dish in itself but it is a combo of meals which comprises of a sweet dish, two or more curries, dal (lentils), usually steamed rice, pickle, puri/naan/chapatti (one of these Indian breads), papad (poppadoms), butter milk, one raita, one or more chutneys, and more or less depending upon whether you opt for the north Indian thali or south Indian thali and also the place you eat.

What's more, almost every Indian state and/or region has it's own distinctive version of the "thali," made to suit local tastes and cooking styles.

According to me the soul of Indian food resides in "Thali", It shows the diversity and verity of the same food with a different twist of spices. If one is from India there is 99% chance that he/she atleast had " Thali" once in their lifetime.

Few Thali are:

A Kathiawadi thali is a 100 per cent desi alternative for those who love their dinner authentic. The beauty of khathiawadi thali is that it has a sweet taste in everything. Even those thing that are meant only to be gilled with spices in India that to will have a little sweetish taste

Bhojpuri Thali

This is a part of North Indian and Nepalese cuisine and a style of food preparation common amongst the Bhojpuri people living in Bhojpuri region of Bihar and Uttar Pradesh. This "thali" can surprise you with its spicy flavour and beautiful aroma.

Goa Thali

As goa was invaded by Portuguese you can see the Portugal influence in the goan cuisine . Though it has Portugal influence the Konkan and malvani cuisines are also popular in this state.Goa is the place most loved by tourist for its ambiance and humid weather. As goa a near to sea you'll see the influence of sea food.

Biryani

You may have heard the word biryani floating around when it comes to Indian food. What is biryani?

yani is thought to have originally come from Persia, making its way to the sub-continent through different routes via traders and immigrants.

History of Biryani

The name “Biryani” is derived from the persian word “Birian”, which means to fry or to roast. During the 18th and 19th centuries, the dish gained popularity during the Mughal rule in Lucknow and Hyderabad, both regions having their own special varieties of Biryani. It was during this period that Biryani came to be considered as a royal dish for Nawabs (Nobles).

Biryani takes time and practice to make but is worth every bit of the effort. Long-grained rice (like basmati) flavored with exotic spices such as saffron is layered with lamb, chicken, fish, or vegetables cooked in a thick gravy. The dish is then covered, its lid sealed on with dough and the biryani is cooked on a low flame.

There are different types of biryani but few of them are just like out of the world!!

Hyderabadi Chicken Dum Biryani

Dum cooking

Par-cooked food is kept in Handi ( deep, wide-mouthed cooking vessel) with minimal amount of water. The lid is placed and sealed with a paste of flour and water. The flames are put out, leaving a bed of hot coals. The heat creates the steam, the steam condenses and rolls down the curved walls. In other words, the steam is choked before it can escape, leading to the term 'Dum Pukht'.
For some of the dishes, the coals may also be placed on the lid to distribute heat evenly

Shahi (Noble) biryani

Its also same as dum biryani the only difference is the presence of dry furits and Ghee.

Chats

The word "chaat" is from Hindi verb "chaatna" which means to lick. True to form, chaat is finger licking good, and if eaten as it is served, using your hands, can make licking almost mandatory to its enjoyment
Chaat is not the name of one dish but include a variety of other dishes mainly pani puri, sev puri, pav baaji, to name a few.

Different types of Chats

Pani Puri

images (16).jpg

You can understand its speciality by its popularity that it is know by 11 different names like pani puri, gol gappe, Paani ke Patashe, Patashi, Gup Chup and many more. It is like how our lifes are little bit sweet, little bit salty, little bit of spicy.

Sev Puri

Sev puri is one of the famous indian chaat, the combination of crispy flat puri, deep fried gram flour noodles, boiled potatoes, green beans, onion and Chutney. So much of stuffed filled inside a tiny rocket called puri. Its a blast once it goes into the mouth.
