I think the flowers only come in the old part of the plant but I normally dig the oldest part up first and leave the young parts because if ginger gets too old it becomes very strong in taste and texture nearly like bamboo so not pleasant to eat.

Yes, I will let some grow older to have flowers in the future.

STOPnice ginger you grow, I love ginger. I've never seen the flowering plant. Always just bought the roots in supermarket.
Mine have also not had flowers before, maybe because I have not waited long enough and eaten them before they had a chance.
