Healthy Friday Eats! | It’s an Apple-icious Waffle Morning!
Happy Friday my Foodie friends!
Have you all survived the holidays? The New Year is just around the corner and I don’t know about you but the Birds will be tightening their belts with the New Year! Long bike rides will be necessary as we ring in the New Year. Mr. Bird was off and running this morning!
No breakfast for the Birds until we hit the bike trail! Feathers were flying!
Blue skies and sweet flowing fountains, the streets were quiet…
something we both cherish right now as the snow birds are quickly infiltrating the area.
Back at the Bird’s nest…
Mr. Bird was tweeting a hungry tune! Holidays bring hungry families; luckily I had something quick and healthy in mind! I made fresh Apple Butter this week, a perfect accompaniment for a Bird feast! Apple butter is wonderful topping for toast, nut butter sandwiches and Waffles! No need for heavy syrups and processed sugars!
Apple Butter Waffles!
- Fresh Eggs (qty 4)
- Sun Butter (1/2 cup)
- Baking Powder (1/2 tsp)
- Apple Butter (2 tbsp.)
Grab your favorite blender…
or whisk! Blend the eggs, Sun butter and baking powder together. Now add the Apple Butter and stir well. With my handy waffle maker I whipped up 6 sweet waffles!
Layered with Apple butter and fresh Coconut yogurt…
Mr. Bird was speechless! Little did he know it was healthy too!
Waffles are always a family favorite around the Bird’s nest. Needless to say I tucked a mini waffle maker in my son-in laws stocking this year. My grandson loves waffles and even busy parents can whip these up in no time. These can be made with any of your favorite nut butters!

Another cool idea here Mrs. Bird. We normally stick cream and strawberries on the waffles, but could also give this a try.
Hope that there are many great things for the birds in the storehouse of 2020.

Apple butter... waffles... that is like my kryptonite!! Man down Man down!!! I have been thinking about getting a 40 pound box of apples from the local orchard and this talk of apple butter may have nudged me just fat enough to head over and load up. Last time a 40 pound box cost me $15 I think. It’s a lot of apples I can tell you that. Hahaha
