WHITE EGGPLANT

What is white eggplant called in your language? And how do you cook it? We have many white eggplant plants in our garden, and my parents like them a lot, especially my mom. I also enjoy eating them, but unfortunately, I am allergic to them. My mother often cooks it with Roselle (known as HANSERONG in my local language), which tastes awesome. However, I am unlucky because I get an allergy when I consume it. We often give the excess white eggplant to our neighbors, as we believe in sharing the blessings that God has given us. Could you also tell me how you cook it? I would love to know and try your method if it's simple enough.
