Porto is Portuguese liqueur wine which most peculiar feature, in addition to the climate in which the grapes ripen, is its incomplete fermentation that is stopped in primary stadium with the addition of wine alcohol obtained from wine distillation containing about 77% alcohol. In this way the wine is naturally sweet - because of the residual sugar from the grape which the yeasts could not completely transform into alcohol because it was inhibited by the high concentration of ethanol which could reach levels ranging from 19 to 22%.

First of all, there are seven basic types of wine, which vary both for production techniques and for organoleptic characteristics. It starts with the basic category, and then counts WHITE , ROSE` and RUBY, to get the most precious qualities, named TAWNY, AGED TAWNY (which can be marketed starting from 10 years of aging up to 40), COLHEITA, LATE BOTTLED VINTAGE (LBV), up to VINTAGE, the absolute most prized.

The Porto requires a typical glass, called "copita", with the characteristic tulip shape and supported by a medium sized stem; to maximize the aroma, however, it is also possible to serve in a very large glass cup, especially for the most prestigious varieties. This wine must always be kept horizontally, protected from external light sources and under extreme temperature conditions, but rather constant and stable. A glass-free cabinet, placed in a damp room, would be ideal.

In general, this wine is always an excellent aperitif, which can be valued and in turn enhanced by a combination of cheeses with a strong flavor, such as the typical grassy ones such as Stilton, Gorgonzola, Pecorino and Roquefort. As for the second dish, you can leave room for creativity because this wine works well with traditional dishes such as orange duck and with intense flavors like pork and beef. Equally valid and timeless is the combination of Porto and sweets, which represents the worthy conclusion of an important dinner. In addition, this wine is often used in the kitchen for the preparation of some desserts and cakes or for flavoring meat or fish during cooking.
