Zucchini egg scramble - easy keto meal!
Ingredients used:
1 tbsp Kerry gold butter
1/2 zucchini
1/4 red onion
3 organic eggs
1 tbsp heavy cream
1 ounce of crumbled feta
Seasonings:(I used a pinch on almost everything)
Garlic salt
Black pepper
Oregano
Chilli powder
Cayenne pepper
Steps:
- Heat up a pan and put the butter on to melt on low heat.
- While that's melting cut up onions, and slice zucchini into thin circles. (Not too thin, then they burn)
- Add onions in first and turn the heat to medium let those cook for a minute.
- Next add the zuchinni, and now add some seasonings genereously over everything in the pan. Cover the pan and bring it to a medium low heat.
- Now crack the eggs in a bowl, add the heavy cream, and then scramble it.
- If you like your zucchini well done wait for them to brown a bit, if not add in egg mixture once they get soft. Also add some more seasoning over the eggs as well.
- Mix around eggs, and veggies. Just until the eggs aren't funny any more, at least that's how I like them.
- Finally add feta and then cover with lid with fire off. After a few minutes it should be ready to plate.
