Zucchini pancakes
Pancakes should not be boring pastries. The following recipe suggests adding zucchini to them - one of the healthiest vegetables, which, in addition to enriching the body, is also very tasty.
Ingredients:
1 small zucchini,
2 eggs,
2 tablespoons flour,
bunch of parsley,
fresh ground pepper,
salt,
1 tablespoon olive oil.
Preparation:
Wash and peel the zucchini, then grate on a large grater. Add salt and leave for 15 minutes. Drain zucchini, add beaten eggs, olive oil and chopped parsley. Then add the flour and mix thoroughly. Season with pepper, stir again. If the dough is too thin, add more flour. Roll out the dough in a hot pan and fry it on both sides until golden brown. It can be served, for example, with tomato or yogurt sauce.
