Seems like a good piece of pocket hardware :) Need to buy the same phone myself. By extra lighting you mean some professional lighting or just some desk lamp or something?
Because it was indoors and without that the footage would have looked much worse due to a slower shutter speed (not as smooth motion), higher iso (grain), different (much warmer) color temperature.
The s7 has a decent 'pro' mode that lets you lock the ISO, Shutter Speed etc...
The s7 wouldn't necessarily be a good buy just for the camera alone; might be better off with a used DSLR camera in that case. But those can't fit in your pocket.
To tell the truth I am not too savvy in photography yet. So, your result and explanation seem just perfect to me. To buy something better I need to analyse the market first, and I am too busy with a number of business activities I am currently involved in. I just see your picture quality and can't even imagine I may need something better than that :)
