Hello my beloved Steemians!

Today we are going to talk about Spring Festival, which is the most important holiday in China. It's a common tradition for Chinese people to get together for a big dinner with their families on Spring Festival's Eve. We always prepare a vast variety of food for that occasion, including chicken, duck, fish, pork and much more. Still, the most traditional food are dumplings. Children are really into this festival, as it's great opportunity for most of them to try a lot of tasty food and wear traditional Chinese costumes.
Another vital part of Chinese tradition on that day is giving each other red packets - most of children get them during the holiday. Chinese people believe and this money brings lucks as well. After having a big dinner, we mostly watch Spring Festival parties on TV. We chat with each other and take advantage of time we can spend together after months of not seeing each other - most Chinese people do not work in their hometowns, that's why it's a rare occasion to meet all your family at once.
People visit their relatives and friends, greeting them with best New Year wishes.

Many of my foreign friends always admire the fact that I can make dumplings when Chinese New Year comes.
Here comes my question then:
Do you know why Chinese people eat dumplings on Chinese New Year? ;-)

There are basically 3 major reasons:

  1. Chinese people pay much attention to the past and ancient beliefs. In the past it was part of our culture to worship ancient gods and eat dumplings after the worship rituals, on the purpose of showing one's appreciation for another happy year having passed. The word dumpling - 'Jiazi' in Chinese is also a homonym for the blessing.

  2. Dumplings are shaped and they look like gold - that's why they are connected with felicitous wish of making money. It's a common tradition to eat dumplings while making prosperous wishes for Chinese New Year.

  3. Different kinds of dumplings have different fillings - people can use a lot of ingredients to stuff the dumplings with - different kind of fillings have different meanings and are considered to be different sorts of blessing for your loved ones.

I hope I have just resolved some doubs regarding the importance of eating dumpings on Chinese New Year hey!

Okay, guys!
Now it's time for me to share some precious information with you!
I am going to teach you how to make homemade dumplings on this special occasion! ;-)

#1 STEP: Preparing the dough.

Mix the flour with water.
When the dough is ready, we can begin to make the dumplings wrapping.
We use a rolling pole to roll the dough into small, thin and round pieces so that they will be easier to boil.

4.jpg

#2 STEP: Preparing the filling.

When the wrappings are done, it's time to prepare the filling.
Usually, the meat used to make the filling is beef or mutton/pork.
We also often add vegetables such as cabbages or leeks to make it richer in taste. You can actually choose whatever you like to fill the dumplings with. After that we need to add some spices like salt or pepper, oil and other seasonings - remember to mix all the ingredients and spread them out evenly on the dough.

5.jpg

#3 STEP: Wrapping up the dumplings.

When all these preparations are done, we can start making dumplings. First, put a tablespoon of filling in the center of the wrapping.
Next step is sticking two opposite sides of the dough together and then leaving the dumplings for a while. You can't put the dumplings right into the boling water after wrapping them up - you need to let the dough rest for a while so that it sticks together properly.

Well done!
Look at our home made dumplings, they are nearly ready!
They look lovely, don't they? ;-)

PS: The best shape of dumplings is the one that remains a ship, because when the dumplings boil in the pot, they look like ships sailing in the sea. It looks so delicious!

#4 - Boling the dumplings in the water.

Boil the water and add the right amount of salt until the salt dissolves in the water. Put the dumplings into the boiling water, at the same time - be careful not to put too many as they can stick together and it can cause the dough fall apart.
Stir the hot water every now and then so that let the dumplings don't stick to the bottom of the pot.
Cover the pot with the lid and wait until the dumplings start floating on the surface of the water. That's the sign that the dough is ready. Delicious Chinese dumplings - here we come!

In the end, I would like to share my family photo with you.
Always remember that home is the harbor of love.
My best wishes to all of you guys out there in 2018!
